When to Harvest Honey: Reading Capped Frames

Harvesting too early is the mistake nobody warns first year beekeepers about, because everything about a heavy super says the honey is ready. It is heavy, it smells like honey, and the frames look full. What the frames do not show at a glance is how much water is still in those cells, and honey pulled before the bees have finished drying it ferments in the jar weeks later.

The bees give you a clear signal when they are done, and it is visible from two feet away with the frame held up to the light. Why Capping Is the Signal

Nectar comes into the hive as a thin, watery liquid. The bees reduce that water by fanning and by moving it between cells, and only when it has thickened enough to keep do they seal the cell with a wax capping. That capping is the colony’s own quality control, and it is far more reliable than anything you can judge by weight.

Honey with too much water left in it ferments. Not immediately, and not visibly at first, but a jar that bubbles and pushes its lid off in October usually traces back to frames pulled in July that looked full and were not finished. Waiting for the caps is the single most effective thing you can do about it.


Reading a Frame

Pull a frame, hold it up so light comes through from behind, and look at the pattern. Fully capped frames show an even sheet of pale wax across the face. Frames still being worked show capped cells around the outside and open, glossy cells toward the middle, because bees cap from the edges inward as the honey ripens.

Partly capped frames are the judgment call. A frame that is capped across most of its face with a small open band is generally safe to take. A frame with wide open areas is not finished, and the fastest way to find out is the shake test.

The Shake Test

Hold the frame horizontally over the open hive, capped side down, and give it one firm downward shake. If nectar sprays out of the open cells, the honey in them is still thin and the frame goes back on the hive. If nothing comes out, the uncapped cells have ripened even though the bees have not sealed them yet.

Do this over the hive rather than over the grass, both because you want the nectar to go back to the colony and because flinging sugar around the apiary is a good way to start robbing. It costs five seconds per frame and it settles the question without any equipment.


Checking Moisture Properly

A refractometer measures water content directly, which turns a judgment call into a reading. You put a drop of honey on the prism, look through the eyepiece, and read the moisture percentage off the scale. It is the only way to know for certain what is in a doubtful frame before it goes in the extractor.

The threshold most keepers work to comes from the United States Standards for Grades of Extracted Honey, published by the USDA Agricultural Marketing Service, which sets the moisture ceiling for the top grades at 18.6 percent. Honey above that keeps less reliably, which is why the reading matters if you intend to store or sell it.

Where a Refractometer Earns Its Place

It is not essential for a first harvest, and plenty of keepers with two hives never buy one. It becomes worth having if you are pulling partly capped frames regularly, if you live somewhere humid where the bees struggle to dry nectar, or if you are giving honey away in jars and would rather not find out in six months that a batch was borderline.

Timing Within the Season

Harvest at the end of a flow rather than in the middle of one. During a strong flow the bees are still bringing nectar in, the supers are still filling and the frames on the edges are still being worked, so pulling then interrupts the process and leaves you with a mix of finished and unfinished comb.

In most of the United States that puts the main harvest somewhere between mid summer and early fall, but the calendar date is downstream of the flow, and the flow depends on what is blooming where you live. Your local beekeeping association knows the pattern in your county far better than any national guide can.

What to Leave on the Hive

Whatever the colony needs to get through the season ahead in your climate stays on the hive. That amount is not a national number, and anyone who quotes you one is guessing about your winter. Your state apiarist and your local association are the right sources for what colonies in your area actually need going into the cold months.

The distinction that matters is between surplus and stores. Supers above the brood nest are surplus. What sits in and around the brood nest is the colony’s own food, and taking it is how a hive that looked strong in September becomes a deadout in February.

The First Year Question

A colony started from a package or a nuc in spring spends its first season building comb, raising brood and putting away food for itself. Many first year colonies never fill a super, and taking honey from one that has not is the most common way beginners lose a hive over its first winter.

Getting the Bees Off the Supers

Before a super comes into the house it has to come off without a cloud of bees attached. An escape board placed under the super lets bees travel down into the hive and not back up, so the super is largely empty after a day. It is the least disruptive method and it needs no chemicals and no equipment beyond the board.

The alternatives are brushing frames one at a time, which is slow and irritates the colony, or a fume board, which works quickly but is more of a commercial tool. For one to four hives, an escape board the day before is the calmest option, and it also means you are not carrying an angry super across the yard.

Can I harvest a frame that is only half capped? Only after a shake test or a refractometer reading. Half capped often means half finished, and mixing unripe honey into a batch brings the moisture of the whole bucket up rather than averaging out harmlessly.

What happens if I harvest too early? The honey ferments, usually weeks or months later, and the jars bubble, smell yeasty and push their lids. It is not dangerous to the bees, but the batch is not good honey any more.
